Instructions

In a large mixing bowl use your hands and combine the eggs and ground beef. Shape into patties.

I used to judge a restaurant by it's cheeseburgers, but that's a futile effort around Prague. Hamburgers don't exactly translate well here. As a general rule, I don't order hamburgers or steaks here. It's a much safer bet to order the local cuisine: Svíčková, Halušky, Smažený sýr etc ...

Okay, I've actually had good hamburgers and steaks in Central Europe, but let's just say it's not exactly the specialty around here. And yes, I do know about, and have eaten at the Dish, but what I'm saying how many of y'all have been to the Midwest? :mic drop:

So, being the meat and potatoes kind of guy that I am, I've figured out how to make great hamburgers.

Czech grocery stores can be confusing for foreigners. Hell, they are confusing for locals as I'm constantly hearing them ask about what percentage of meat is in their meat? Oh, I don't even want to know.

I can find the ground beef and it looks like ground beef, feels and smells like ground beef so let's just call it ground beef.

But I have had problems with the cooking of such ground beef. This is a serious problem for a guy who wants a good hamburger.

So I improvise. I add a couple of eggs to the mix, and this is a miracle. Everything sticks together and the patty remains plump and juicy just how I like it.

Yes, everyone has their theory about what type of ground beef mix is the best, blah, blah, blah. I've used ground beef from the store, these methods and everything works out fine.

It is also important to make sure and season the meat on the outside after you have formed the patty. Salt pulls moisture out. To keep the moisture locked inside the patty season on the outside of the patty just before cooking. I also baste with melted garlic butter for a nice caramelization. It's just pure goodness.

Using the grill is best, but frying on a cast iron skillet works well too.

And it goes without saying: Wash your hands before and after mixing the meat. It's always a good idea.
